Coconut Flour crepe with strawberry filling

This is a delicious and easy crepe recipe; my daughter had it for breakfast earlier today and she loved it. I did not tell her though that it’s coconut and she did not even notice (…she’s not a big fan of coconut). In this recipe, I used strawberry and I topped it with chocolate syrup.  You can choose whatever filling or topping you want according to your own liking. Next time, I plan on using blueberry and topping it with powdered sugar.  Banana with crushed almonds and vanilla ice cream drizzled with caramel syrup also sounds yummy to me.

Here is the recipe for the crepe

2 eggs

2 tbsp coconut flour

1 tbsp grapeseed oil

1 tsp honey

1/2 cup milk

salt to taste.

You simply mix everything until there are no more lumps.  To cook it, heat a non stick pan and melt about a tablespoon of butter.  Pour about  a third of the mixture and twirl the pan to spread the batter. Cook it on low heat.  Once its settled, flip the crepe to the other side to cook.  Be careful when you flip it as it is a delicate crepe.

Fill the crepe with your favorite fruit and you are done.

    What do you recommend as substitute for someone with sensitivity to cow milk? i have been using almond milk as a substitute for drinking, but I am not sure it will have the same properties for cooking.

    Love your recipes ! I need your opinion though, I make my own coconut flour at home by making coconut milk from fresh shredded coconut meat then taking the pulp and put it in the oven under low temperature and then in food processor ; the thing is it doesn’t taste really like anything :( doesn’t have a strong coconut flavor , any recommendations ? Thank you

    I’m allergic to eggs, almonds & i can’t use rice or potato flour. I’m underweight & trying to find recipes.

    • hi Char,
      have you tried Oat milk? I guess rice milk is not an option either? How about unsweetened soya milk. Eggs are bit tricky to replace but chia seeds are good for that purpose or cooked & grind millet (it gets quite sticky when cooked, it can help to hold other ingredients together). good luck :)
