Chocolate Chip Cookies

1/2 cup butter melted
1 cup brown sugar
4 eggs
1/2 tsp vanilla
1/8 tsp salt
1 1/2 cups grated or flaked coconut
3/4 cup semi sweet chocolate chips
1 cup sifted coconut flour

Mix together butter, sugar, eggs, vanilla and salt. Stir in coconut, chocolate chips, and coconut flour. Drop batter in spoon-size mounds 1 inch apart on greased cookie sheet. Bake at 375 degrees F for 14-15 minutes. Cool slightly and remove from cookie sheet. Makes about 2 dozen cookies.

Reduced Sugar Coconut Chocolate Chip Cookies
Make the cookies as directed but reduce sugar to 1/2 cup and add 1/4 teaspoon powdered or liquid stevia.

    I plugged in the recipe at and it says 95 calories. I am not sure though how accurate that is. We will consider including this in the future post.

      Just made these awesome, however would reduce the amount of sugar next time. Thanks for the great recipe it’s my first time cooking with coconut flour love it!

    To lower the carb count, but keep the flavor and moisture would be to replace the sugar with liquid splenda (usually 24-28 drops) and add a tablespoon of blackstrap molasses. The molasses is 11g of carbs, but if this makes 24 cookies, then the carb impact per cookie is negligible.

      Splenda is poison. It’s a man-made chemical and is extremely bad for your body! Google the effects it has on your liver and kidneys. Just saying… :)
